Technical Specs

  • Egyptian Crop Varieties: Roma, UC82, and local high-solids industrial plum tomato cultivars.

Available Formats & Technical Formulations

  • Cold Break (CB): Processed at lower initial break temperatures (65°C–75°C). Delivers lower viscosity but preserves a fresher color and flavor profile; ideal for tomato juices and thin sauces.
  • Hot Break (HB): Processed at higher temperatures (85°C–100°C). Deactivates natural pectinase enzymes to achieve ultra-high viscosity and thick binding qualities; ideal for premium ketchups and pizza toppings.
